Mmmmm, this sounds wonderful. I will have to give it a try. The great thing about it is that I will be the only one at home to eat it, since no one else likes mint. (maybe that is a bad thing---LOL)

Now this is a great ice cream that would be good for you!
I have tried some of the cocoa nibs and they are great - I have not yet tried them in ice cream but sounds and looks good.
The idea of adding a dash of green tea sounds good - it all sounds delish-ish.

What a great non-dairy recipe! I have developed a lactose intolerance myself. I can usually get big with the little pills, but this is definitely another option. I love mint chocolate chip a lot too. Thanks for sharing.
